Zucchini Bread

This was my mother’s recipe and it’s still my favorite.

2 1/2 C sugar
1 C butter
3 eggs-add one at a time
2 C cooked zucchini*
3 1/2 C flour
1 t baking soda
1 t cinnamon, cloves, nutmeg, allspice (or to taste)
1/2 t salt
1/8 t baking powder
add nuts and raisins as desire

*I don’t cook the zucchini – I just grate it.

Mix the dry ingredients in a separate bowl. Cream the sugar & butter then add the eggs one at a time. Mix in the dry ingredients. Stir in zucchini. Bake in greased loaf pans until golden brown and pulls from the sides of the pans in a 350 degree preheated oven.

I usually don’t have allspice, so I leave it out. And I only add a dash of cloves.
