SuperSimple Shrimp & Grits

6-8 oz. shrimp – raw, peeled, deveined, tails-off (you can buy it frozen with the work already done, thus keeping it SuperSimple)

Grits – 2 servings, prepared anyway you like them

1-2 T onions, sliced thin

2 large cloves garlic, sliced

2 T butter

2 T olive oil

some sort of Italian seasoning mix to taste

salt & pepper to taste – watch the salt, the shrimp may be salty enough.

Cook up your grits (on the stove top, not the microwave – blech) and keep hot.  Heat up your skillet, add the fats, garlic and onion.  Let that sauté a minute or two.  Toss in the shrimp, salt (opt.) and pepper them, and cook until nice and pink.  Sprinkle with the Italian seasoning, toss and pour over the grits – MUST include the butter/olive oil in the pan.

Best with a big latte or strong cup of coffee and a little seasonal fresh fruit.
