Ratatouille

I love eggplant and I love ratatouille.  I even liked the Disney movie.

1/3 cup to 1/2 cup extra virgin olive oil

1 eggplant – peeled (opt.) and diced into 1″ cubes (about 3 cups)

2-3 zucchini (about 3 cups) – sliced

1 small to medium onion – sliced

2-3 cloves garlic – smashed, peeled, and chopped

1 can diced tomatoes, including liquid

1 – 1 1/2 teaspoon of italian seasoning (I am very fond of the Pampered Chef blend) or you can just use oregano

salt and pepper to taste

parmesan cheese to sprinkle

Grab a large skillet or wok.  Sautee the veggies except the tomatoes.  Adjust olive oil as needed.  When they are about half cooked, add tomatoes, garlic, and seasonings.  Stir, cover, and simmer 30-40 minutes.

Serve over pasta, your protein, or as a side dish.  Sprinkle w/parmesan.
