1 C butter (2 sticks)
2 C sucanat
1 tsp vanilla
2 1/2 C freshly ground soft wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon (opt)
2 1/2 C rolled oats
1/2 C shredded coconut
1/2 C chopped nuts (walnuts, pecans, sunflower seeds…)
Preheat oven to 350.
Cream butter and sucanat until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda, baking powder, and salt; mix well.
Stir in rolled oats, coconut, and nuts; mix well.
Drop by heaping tablespoonfuls onto ungreased cookie sheet. (I smash them in the center a bit with my thumb)
Bake 10-12 minutes until light golden brown. Cool 1 minute on cookie sheet then move to wire rack. Cool completely. Store tightly covered.
