Pineapple Casserole

This is a holiday favorite in our house and goes great with ham or pork. It’s practically a dessert, too.

1 20-oz. can pineapple tidbits (chunks will do), drained BUT SAVE THE JUICE
3 t. sugar (I use less and often use some brown sugar)
3 t. flour
1 1/2 C cheddar, shredded
1 tube of Ritz crackers – eat a couple or three then crush the rest
3 T. butter, melted

Pineapple in greased baking dish. Sprinkle w/sugar & flour. Pour the drained pineapple juice over all. Add layer of cheddar cheese and cover with crushed Ritz. Drizzle w/butter. Bake at 325 for 25 minutes.
