Make your own mix at home from the More-with-Less Cookbook. These are pancakes cook up nice and fluffy.
For 2 lbs of mix/For 4 lbs of mix in ()
6 C flour (12 C)
1 T salt (2 T)
6 T baking powder (3/4 C)
6 T sugar (3/4 C)
2 C powdered milk (4 C)
Mix well and store in airtight container.
To use, combine in a bowl:
1 C water (a little more for thinner pancakes)
2 T oil or melted fat
1 1/2 C pancake mix
1-2 T ground flax seed (opt.)
Fry on hot ungreased griddle.
Serves 3-4 (easily)
Substitute 1/3 of white flour with buckwheat, whole wheat, oatmeal, or rye & cornmeal.
Substitute 1/6 of the white flour with soy flour.
Add 1 C wheat germ to the 2 lb recipe or 2 C to the 4 lb recipe.
Add 1 C of corn or fruit to batter.
