Convenient, make-ahead recipe, a great side dish for invited dinner guests.
3 T finely chopped marachino cherries
1 can (8-9 oz) crushed pineapple, drained
2 C sour cream
3/4 C sugar
2 T lemon juice
1/8 t salt
1/3 C walnuts or pecans, coarsely chopped
1 banana, ripe but still firm, chopped
*extra chopped nuts or cherries for a garnish if desired
Chop cherries and place on paper towels to absorb juice.
Mix sour cream, sugar, lemon juice, salt; stir in pineapple, nuts, and cherries. Stir in chopped banana.
Spoon into paper-lined muffin cups and freeze until firm.
Let stand at room temp about 10 min to soften before serving (almost easier to remove from muffin pan).
Makes a dozen.
