Crunchy Whole Wheat Muffins

2 1/4 C freshly ground whole wheat flour
1 tsp salt (I use less)
1 tsp baking soda
1 tsp baking powder
1 C buttermilk
1 egg
1/2 C oil
1/2 C honey (I prefer a strong flavored honey like wildflower)
1/3 C millet
1-2 Tb freshly ground flax seed

Add-ins: 1 cup of fresh fruit such as blueberries, peaches, apple or 2-3 mashed bananas. Add add’l spices to your taste: 1 tsp cinnamon, 1 to 1/2 tsp nutmeg, a little maple syrup. My favorite add in: mini chocolate chips (about 1/2 C).

Measure dry ingredients into mixing bowl. Add liquids and mix just until well blended. Add any fruit or chocolate chips at this time. Drop by spoonfuls into greased muffin tins. Bake at 400 for 15 minutes.
