Chicken Mushroom Pasta

A hearty dish. Balance this meal with w/steamed veggies.

1 T olive oil
8 skinless, boneless chicken breasts or thighs or both
2 C sliced mushrooms
1 C chopped onion
2 cloves garlic
1 1/2 C chicken broth
1 t thyme
1/2 t salt
2 bay leaves
2/3 C milk
2 T flour
4 C cooked ziti or penne pasta, cooked

Leave chicken whole or cut into bite sizes. Sautee chicken w/olive oil 5 minutes on each side, if leaving whole. Remove from pan.
Add mushrooms, onions, garlic to pan; sautee 5 minutes. Return chicken to pan.
Add wine, broth, thyme, salt and bay leaves; bring to boil. Cover, reduce heat & simmer 30 minutes. Discard bay leaves.
Combine milk & flour; stirring 3 minutes until thickened. Stir in cooked pasta.

Makes 6+ servings.
