Wanted chicken pot pie….too lazy.
OK, chicken & noodles….no noodles.
So, I whipped this up. I know chicken or white chili isn’t original, but this is my version.
1 chicken, stewed w/onion & bay leaf, deboned & shredded
4 C chicken broth
1 can cream of chicken soup
1 can navy or white beans, drained
1 small can garbanzo beans, drained
1 small can diced green chilis
1/2 can diced tomatoes
1/2 onion, chopped
1/4 teaspoon smoked paprika
pepper to taste
grated cheddar/jack cheese for topping
Stew your chicken the day before, boil down the broth & refrigerate.
Brown your onion in a bit of the chicken fat from your broth and discard the rest of the fat. When translucent, add broth and cream of chicken soup. Mix well and add everything else except the cheese. Let simmer until you’re ready to eat (about 5 minutes for us). Top with cheese.
Oven toasted corn tortilla strips would have really set this off.
