1 large head cauliflower – chopped
1 large or 2 small bunch broccoli – chopped
1/2 lb bacon – fried crispy (I use 1 lb)
1/2 – 1 C red or vidalia onion – chopped fine
1 C raisins
1 C sunflower seeds (optional)
Dressing version 1:
2 C mayo
1/2-3/4 C sugar
4 T red wine vinegar
Dressing version 2:
1 C mayo
1 C plain full fat yogurt (personal fav is Greek Gods Yogurt)
1/2 C sugar
3 T red wine vinegar
1 T fresh lemon juice or 1/2 T grated lemon peel
Cut up your cauliflower & broccoli into small bite size; using some of the stems. Crumble the bacon. Mix up the dressing (should be the consistency of a thick dressing but not thick like a dip). Toss it all together. Chill at least 2 hours before serving.
A versatile recipe that easily adapts to what you have in the pantry. Can substitute walnuts for sunflower seeds or add in some grated carrot. You can use any type of vinegar or substitue some of the vinegar with lemon juice.
