1 chicken – whole or cut up
1 onion – chopped
4-8 cloves garlic – smashed, peel removed
3/4 C soy sauce or Bragg’s Aminos
1/4 C apple cider vinegar
2 bay leaves
black pepper to taste or 10-15 whole peppercorns
add a little water, maybe 1/2 cup
Place onions in crock. Place chicken on onions. Mix the garlic, soy sauce, vinegar, water and spices – pour over chicken. Stick a clove or two of the garlic inside cavity.
Cook on low for 7 hours or high for 4 hours.
Serve with brown rice and sauteed green beans. (Sautee the green beans in a bit of the juices from the crockpot, including 2 cloves from the crock and sautee until desired doneness.)
***Note please….this will be too much vinegar for some, so decrease or omit. You can sub another liquid like water, broth, maybe a half water/half maple syrup mix, or dilute a favorite mustard to total 1/4 C. You can also change the ratio of soy sauce to vinegar.
