Keep it Simple Meatloaf

We love this beet loaf meatloaf!  It is homey and comforting and filling and pretty cheap.

going, going, gone meatloaf

1.5 – 2 lb ground beef

1 slice bread – crumbled

1 egg – slightly beaten

1/2 onion – chopped

1 t salt

1/4 t black pepper

4 T ketchup

2/3 C milk

parsley to sprinkle on top

a handful of something green – chopped fine – spinach, greens, little fresh basil, whatever you have on hand

2-3 T apple cider vinegar (to taste)

4 T dark cane sugar or brown sugar

1/2 C ketchup

Saute onion in some fat of your choice.  Combine all the meat and seasonings with your hands until mixed well.  Shape into loaf or pat into the baking dish (I often use a round deep baking dish).  Spread the sauce on top and bake for about an hour (no pink but not dry) @ 350.
