ham – chopped
potato – diced
grape tomatoes – sliced in half
spinach – fresh
garlic or garlic salt
oil or butter
Heat up the oil in skillet, cook potatoes until nearly cooked through & browned. Add chopped ham. Let that cook a minute or so. Add tomatoes, garlic, and spinach leaves. Stir these up quickly. Spoon on to plate and layer a couple of strips of sliced cheese or grated cheese. Fry two eggs, adding more oil if needed. Lay on top of your veggie/ham mix.
Low Carb Adaptation – omit potatoes, add more spinach or try something like turnips.
Don’t like fried eggs? Scramble them or forget them all together. It’s very French if you throw a fried egg on top though. lol
