My New Fav Holiday Leftover Dish

ham – chopped

potato – diced

grape tomatoes – sliced in half

spinach – fresh

garlic or garlic salt

oil or butter

Heat up the oil in skillet, cook potatoes until nearly cooked through & browned.  Add chopped ham.  Let that cook a minute or so.  Add tomatoes, garlic, and spinach leaves.  Stir these up quickly.  Spoon on to plate and layer a couple of strips of sliced cheese or grated cheese.  Fry two eggs, adding more oil if needed.  Lay on top of your veggie/ham mix.

Low Carb Adaptation – omit potatoes, add more spinach or try something like turnips.

Don’t like fried eggs?  Scramble them or forget them all together.  It’s very French if you throw a fried egg on top though.  lol

Sounds like that is a good use of leftovers. I’ve got to come up with a good way to use up our prime rib. I’m thinking of either noodles & gravy or in a salad (that would be more healthy)

Yum, leftover prime rib. I love it sliced thin with a dark green salad and a wee bit of blue cheese, dried cranberries and walnuts. But then any beefy gravy over a carb is so hard to resist!

That sounds yummy, especially since there aren’t any onions in it! 😀

That sounds good Sheri. Meals that use just one pan is right down my alley. =)
